The Stage Experience is a 6-day internship at a restaurant in Italy. Here students work alongside restaurant chefs and kitchen staff, under the direction of the head chef. The Stage Experience is an effective way for students to become more familiar with Italian cuisine – its nuances, flavors and techniques.
This year, the featured restaurant is Pierino Penati Ristorante located in the beautiful countryside of Viganò Brianza in Lombardy. Chef Theo Penati treasures the abundance nature produces and lets nature dictate the seasonal menu for his cuisine. This concept allows him to follow the tradition, recipes, rituals and ingredients that has fed the story of the restaurant for more than 70 years. Chef Penati’s cuisine has its roots in the distant past of a village tavern, handed down from father to son for three generations.
We select the best ingredients in our territory, focusing on the choice of local suppliers for fruit and vegetables, breads, meats and cold cuts. In our garden we grow herbs, decorative flowers, berries, and when nature permits some types of vegetables. From the sea we get the best fish and shellfish, always trying to match them with local vegetables to calibrate the environmental impact of each dish. Eating well is one of the pleasures of life. The cuisine is distinguished by its authentic regional flavors prepared with top quality products and always focusing on the traditions of family roots.
The restaurant is set in a beautiful countryside area of Viganò Brianza. It is surrounded by a garden where seasonal greens and herbs are grown.

The Stage Experience is designed for students in culinary schools, young professionals with the desire to learn more about Italian cuisine and food enthusiasts. The Stage Experience can be booked at anytime of the year, always in pairs (2 or 4), but not an odd number.
Cost USD $1,350 per person, double occupancy. Single occupancy is available upon request subject to a surcharge.

SUNDAY Depart JFK on a late Alitalia or Delta flight.
MONDAY Arrive in Milano Malpensa Airport in the morning.
Transfer to Viganò Brianza. Settle down in Hotel or Residence.
TUESDAY - SATURDAY Tuesday is the first Stage Experience day. At this time, you will be given your work schedule for the week by Chef Theo Penati.
Please note that the restaurant is open Tuesday - Saturday for lunch and dinner, and Sunday for lunch only.
SUNDAY The student may elect to work the lunch shift or take the day off and visit the city of Milano.
MONDAY Transfer to Milano Malpensa Airport for return trip to USA.
